There are two types of emulsions: 

(a) Oil in water(O/W)type: In this case, oil is the dispersed phase (DP)while water is the dispersion medium(DM). Examples include  milk and vanishing cream

(b) Water in oil (W/O)type:In this case, water is the DP while oil is the DM.Examples include  coldcream and butter.
